If you are thinking about operating a food business, there are a few things that you need to consider before you start.

Setting Up a New Mobile Food Business?

You will need to think about your areas of trade and what type of foods and beverages that you intend to provide. Before you get stuck in, it is advised that you do a bit of homework to cover all the bases and get off to a successful start.


In addition to ensuring that the mobile unit is fit for purpose, you will need to complete an application to register your food business with the Tararua District Council. Depending on the type of food or beverage you are planning to sell, you may need to operate a Food Control Plan or meet the requirements to operate under a National Programme.

Areas of Trade

When planning your business activities, it is a good idea to confirm your areas of trade and get written permission from any land owners. It is also important to contact the Council's Planning Team to make sure that you are operating within the correct zones, as there may be restrictions on what areas allow for trading activities.

If you decide to trade in another district, contact the local Environmental Health Officer to ensure there are no additional requirements; this includes attending organised events.

You may be asked to supply a copy of your current registration, it is also advised that you are always prepared for an unscheduled visit from the local Environmental Health Officer when operating in another district, this visit is to monitor food safety standards and ensure that they are being maintained.


Business Design

Whether you decide to refit an existing caravan, or invest in one that is purpose built, there are a few things that you should take into consideration to ensure that it would meet the basic structure requirements:

  • Adequate facilities for handwashing (including provisions for hot water)
  • Suitability of wall and floor linings
  • Storage and floor space for scope of business activities
  • Enclosed light fittings
  • Water and wastewater storage
  • Refuse disposal
  • Current gas and electrical certificates (if necessary)
  • Current vehicle licence and warrant of fitness
